Cremef\u00fcllung<\/h1>\n<p><strong>Zutaten f\u00fcr den Brandteig:<\/strong><\/p>\n<ul>\n<li>125gr Butter<\/li>\n<li>200ml Wasser<\/li>\n<li>1 Teel\u00f6ffel Salz<\/li>\n<li>1 Teel\u00f6ffel Zucker<\/li>\n<li>150gr Mehl<\/li>\n<li>3 Eier<\/li>\n<\/ul>\n<p><strong>Zutaten f\u00fcr die Creme:<\/strong><\/p>\n<ul>\n<li>400ml Milch<\/li>\n<li>80 gr Zucker<\/li>\n<li>1,5 Essl\u00f6ffel Mehl<\/li>\n<li>1 Essl\u00f6ffel Speisest\u00e4rke<\/li>\n<li>1 P\u00e4ckchen Vanillezucker<\/li>\n<li>50gr Butter<\/li>\n<li>200gr Schlagsahne<\/li>\n<li>200gr Mascarpone<\/li>\n<li>Puderzucker zum Bestreuen<\/li>\n<\/ul>\n<p><strong>Zubereitung:<\/strong><\/p>\n<ul>\n<li>Butter und Wasser in einem kleinen Topf aufkochen.<\/li>\n<li>Wenn die Butter geschmolzen ist, Zucker, Salz und Mehl hinzuf\u00fcgen, dabei mit einem Kochl\u00f6ffel kr\u00e4ftig r\u00fchren.<\/li>\n<li>Bei niedriger Hitze weiter r\u00fchren (ca. 5 Minuten), bis sich der Teig als Klo\u00df vom Topfboden l\u00f6st.<\/li>\n<li>Wenn der Teig etwas abgek\u00fchlt ist noch einige Minuten mit den H\u00e4nden verkneten.<\/li>\n<li>Dann das erste Ei zum Teig geben und mit den H\u00e4nden unter den Teig arbeiten.<\/li>\n<li>Nacheinander die restlichen zwei Eier unter den Teig arbeiten.<\/li>\n<li>Den Teig in einen Spritzbeutel f\u00fcllen und 10cm lange Eclairs auf ein Backblech spritzen.<\/li>\n<li>Aus diesen Zutaten erh\u00e4lt man zwei Bleche.<\/li>\n<li>Die Eclairs im vorgeheizten Backofen bei 200 Grad 25-35 backen bis sie goldbraun sind.<\/li>\n<li>Nach 20 Minuten Backzeit bitte kontrollieren, denn die Backzeit kann schwanken.<\/li>\n<li>Nach dem Backen die Eclairs abk\u00fchlen lassen.<\/li>\n<li>F\u00fcr die Creme alle Zutaten bis auf die Schlagsahne und Mascarpone im Topf unter st\u00e4ndigem R\u00fchren aufkochen.<\/li>\n<li>Die Creme zum Abk\u00fchlen beiseite stellen.<\/li>\n<li>Zwischendurch immer wieder umr\u00fchren, damit sich keine Haut bildet.<\/li>\n<li>Die Sahne steif schlagen und dann die Mascarpone unterr\u00fchren.<\/li>\n<li>Diese Mischung zur abgek\u00fchlte Creme geben und zusammen r\u00fchren.<\/li>\n<li>Von den Eclairs einen Deckel abschneiden.<\/li>\n<li>Die unteren H\u00e4lften mit der Creme bestreichen und und die Deckel wieder auflegen.<\/li>\n<li>Zum Schluss noch mit Puderzucker
